Dr Nilu’s Chocolate Pecan Slice Recipe

Ingredients

Steamed sweet potato, 300g
Mashed banana, 100g
Almond flour, 300g
Eggs, beaten, 4
Coconut Oil, 100g
Raw chocolate powder, 5 heaped tablespoons
1 tsp bicarbonate of soda
Honey, according to taste
Handful of chopped pecans for mixture and whole pecans to decorate

Method


1. Preheat oven to 180 degrees C
2. This is quick and easy to make if you have a food processor.
3. Mash the sweet potato and banana and stir until well mixed
4. Add the almond flour and mix well
5. Add the beaten egg mixture and then the coconut oil and make sure it is well mixed
6. Mix the chocolate powder and bicarbonate of soda and add to mixture, mixing well
7. The mixture is naturally quite sweet but it you prefer it a bit sweeter, please add honey to taste
8. Lastly, add chopped pecans
9. Oil a baking dish and then add mixture til it is about 6 cms deep
10. Add the pecans to decorate
11. Bake for approximately 30-45 minutes (times vary according to oven)
